I’m planning on making Congee with Pumpkin and Pine Nuts from J. Kenji Lopez-Alt’s The Wok cookbook this week, and it looks like this recipe has an error.
The ingredients call for both “Water or low-sodium chicken or vegetable stock (6 cups for short-grain, 5 cups for jasmine)” and “9 cups water, vegetable, or chicken broth.”
But the directions only call for “water or stock” once: “Add the rice, squash, water or stock, and brown sugar or maple syrup.”
So is it 5–6 cups or 9 cups? I plan to have 9 cups available but will start with 5–6 cups and add more as needed for the texture. I’ve added to my running list of errata and will update with my opinion after I make it this week.
