As part of the Japanese Katsu recipe, I also made J. Kenji Lopez-Alt’s Homemade Tonkatsu Sauce from The Wok cookbook.
Perhaps surprisingly, all of the ingredients are pretty well known to a USian pantry: ketchup, Worcestershire sauce, soy sauce, and sugar. You mix them all together and that’s the sauce. Pretty easy.
I’ve made a couple of other tonkatsu recipes before. This one from Just One Cookbook is similar except uses oyster sauce instead of soy sauce. This one from Serious Eats has a similar base but adds mirin, Dijon mustard, and garlic powder.
I liked the Just One Cookbook one better than the Serious Eats one, but Kenji’s is just as good.
